I am a member of the Oklahoma Bicycle Society. Have been for..... two and a half years, I do believe. Though, I have been an absentee member for the last year. The Streak is their annual charity ride to raise money for helmets for the salvation army. The Streak is tomorrow..... I have not participated in anything for OBS since last year's streak. Tonight they posted a plea for cookies for the rest stops along the route. They didn't get as many donated as hoped and are short. Maybe it is my desire to bake for people which has been yearning for an opportunity to surface or my guilt for not helping out the group this year that led me to commit to 10 dozen cookies.
Not a big deal, a quadruple batch of the old familiar chocolate chip cookies should yield that plus enough dough left over to keep me and the girls happy for the next couple of days...... did I mention we went to a parade today? These two things are related so bear with me. I left the house at nine o'clock this morning. We had a great time at the parade, then the girls spent the afternoon at Mimi's so I could go work, followed up with a trip to Grandma's to watch the first half of the pay per view game. Still not following? Okay, I got home at 9:30....... Did I mention we live out in the country? It's late. It takes about 20 minutes to get to the closest grocery store......20+20+ however long it takes to get in and out of the store = a very long time when you're talking about it this late at night....... 9:30 at night.... I open my fridge...... I have two sticks of butter..... *insert cursing brought on by desperation and exhaustion*
For those keeping track that's about enough for one batch of cookies. I only have one recipe on file that calls for no butter and it's a volatile recipe that doesn't always cooperate. Fortunately, thanks to a friend and facebook I have some emergency recipes, but then comes the big fear. Trying out a new recipe on strangers..... The first rule of cooking is to never try a new recipe out at an event. (Yes, really, I saw it in a movie once.) Well, tonight we have no choice. Turns out not only is my butter stock low, but I had barely enough oats and peanut butter to make these recipes. I also had to improvise on my previously used recipe. We shall see!
Here is what I ended up with:
Butterless Chocolate Chip Cookies Okay, the butterless cookies were VERY chewy. Chris liked them. I like fall apart cookies so not my cup o' tea.
Peanut Butter Chocolate Oat Cookies I think this was my favorite, will be pinning and using again.
Oat Nuggets: These turned out pretty good. A little bland in my opinion with the pumpkin. Had my brain been working last night I would have added cinnamon and nutmeg to it to make a mini pumpkin oat pie kind of thing.
Beat together:
1 cup brown sugar
3/4 cup oil (I have been using less than this, maybe a half a cup)
1 1/2 cup mashed bananas (I used pumpkin tonight, we'll see how it turns out)
1/2 tsp salt
4 cups rolled oats
1/2 cup walnuts, raisins or chocolate chips
Bake at 350 for 20 minutes.
A few more minutes and there will be 9 dozen cookies cooling on my counter. A dozen short of goal, but technically I said between 8 and 10, so it counts. A couple of them are falling apart so I will have an excuse to try them all in the morning. Now to bed!
Update: Well I made it there before 6:30 to drop off the cookies. I ended up sticking around to help with packet pick up. I'm glad I showed up. They had a lot less volunteers this year... I felt like I was needed this year versus mostly standing around last year. It was nice to see some faces I hadn't seen in a while even though most of them didn't recognize me since I'm 50 pounds heavier than a year ago. It'll be fun getting back out on the bikes next year and catching up with everyone.
